Coolant Light Coming On-Intermittent

I've heard this is sometimes a problem in MK4s...but my coolant light comes on intermittently. Usually it comes on when I first turn on the car and drive it around for awhile. After making a few stops, it doesn't come on. But if I'm in somewhere for long while and then go start my car, it'll come on. My coolant level is fine, I have no leaks, and its not overheating. Is this just a sensor on the bottle itself? Anyone else have (or have had) this problem? Thank you for any input!
